
500 g lean mince
1 onion, chopped
2 cloves garlic, crushed
2 cups beef stock
1 x 410 g can chopped tomatoes
1 tsp dried mixed herbs
1 tsp paprika
1 cup uncooked rice
1 x 410 g can cream style sweetcorn
2 carrots, peeled and grated
1 cup frozen peas
salt and pepper to taste

Heat the oil in a large saucepan and brown the mince. Remove and set aside.

Sauté the onion and garlic in the same saucepan until soft.

Add the browned mince, beef stock, chopped tomatoes, mixed herbs, paprika, and bring to the boil.

Stir in the uncooked rice.

Cover and simmer for 20 minutes.

Add the cream style sweetcorn, grated carrots, and frozen peas.

Season with salt and pepper.

Cover and simmer for another 30 minutes.
